How We Make It

How We Make It

You won’t believe how much effort goes into this little beauty!

The onions are finely sliced and caramelised then the ras-el-hanout spice is added and fried a little to release its’ aromatics. Next the shanks are browned in the mixture and then the rest of the ingredients are added. All this is simmered for hours allowing the flavours to meld together and the meat to release its goodness.  Meanwhile we roast the sweet potatoes and cook the basmati rice.

At the end of the cooking the sweet potato is added to the pot to soak up the flavours and then the shank is assembled on the rice. This dish is ready to heat and eat with a wonderfully sticky sauce and tender meat.

Lamb shank, Onion, Sunflower Oil, Garlic, Ras el Hanut, Red wine, Sultana, Balsamic vinegar, Apple cider vinegar, Brown sugar, Salt, Cracked pepper
