How We Make It

We sift together white and wholemeal flour in a dough mixer. We add yeast, a tiny bit of sugar to enable fermentation, water and extra virgin olive oil. We start the mixing and add some salt.

We continue mixing for a while to get the gluten going which later will contribute to the chewy texture of the bread. After the mixing is complete we leave the dough for a while. Resting the dough is essential for forming successful pocket later in the baking process. After a while we divide the dough to the correct portions and let it rest some more. We then roll the dough out to the flat round shape and leave to rest yet again. Later we place the flat dough on large trays and bake on high heat which is essential to form a pocket.  The baking time is very short (around 3 minutes and our kitchen is filled with the divine smells of fresh bread.

Frozen product.

Defrost in room temperature for 15-20 minutes. The bread is fully baked and  is ready to eat. However, we recommend placing for 30 seconds in press toaster for best results.  Suitable for making great sandwiches, toasts or eating with dips.
